Ok, get ready. Seriously, get ready for your favorite new cookie!
I whipped these up Sunday and was like OH MY, let me have another one or two….or three.
I had a sweet tooth craving going on and found a ready made mix of sugar cookies in the pantry and so my initial thought was fruit cookie pizza like here. Big sigh. I was out of cream cheese, bummer.
So I decided to get innovative. I whipped up the easy sugar cookie mix which just included adding 1 tbsp of water and 1/2 stick butter and mixing until well combined.
While they baked at 350 for just 7 minutes I did some thinking. I recently saw a great Pinterest idea to plop a marshmallow on top of cupcakes for icing if you were out…..Hmm…
I decided why not plop a marshmallow on top of the sugar cookies, let it bake for 2 minutes and Ta-Da!
While the marshmallows baked on top I rinsed and sliced up a few strawberries.
Simply remove the cookies, squish the marshmallow icing topper down a bit to stick well to the cookie. Finally, top it off with a delicious strawberry sliver. A-mazing!
The hubby and I both were in awe. The toasted flavor of the marshmallow and the warmth next to the cool strawberry are a delight next to the sugar cookie.
Try it and get ready for you will want to eat the entire batch of cookies!
